And although that seems like a lot, the truth is that that’s not very many if we stop to think about all the secrets we accumulate throughout our lives. We don't know if there are many secrets behind the wines made by Nicholas Crampton and Corey Ryan, but what we do know is that with their Take It To The Grave wine project, their wines are made for just that, taking to the grave. This pair are renowned winemakers from South Australia and they create original and rewarding wines that challenge some preconceived rules. Just take a look at their funny labels...

Take It To The Grave Shiraz, a red wine made with the Syrah variety, showcases their unique line of work. Sourced from a selection of mature vineyards in the Barossa Valley (South Australia), respectful agriculture is used to achieve opulent fruit depth. Once harvested and destemmed, the grapes undergo cold fermentation in small two-tonne open fermenters with regular manual immersion. The wine then ages in cured French oak barrels, 20% of which are new, for 6 months. Finally, it is bottled with minimal filtration and sulphur.

From what we’ve seen, there is no great secret in the making of Take It To The Grave Shiraz. Everything is focused on respecting the raw material from start to finish. However, it is not as easy as it seems. The secret lies in knowing the subject matter and, on that, Nicholas Crampton and Corey Ryan know a huge amount...
