•  Spice Base : A fragrant and complex blend of shallots, garlic, ginger, galangal, lemongrass, tumeric and dried chilli paste. Often includes kerisik (toasted grated coconut) for a nutty depth and lime leave or tumeric leaves for added aroma.
• Cooking Method : The chicken quaters are simmered in the spiced coconut gravy until the sauce thickens and clings to the chicken. As the cooking progresses, the sauce reduces into the thick, caramelized coating with oils from the coconut milk and kerisik enhancing the flavor.
