After 18 years of conquering international hotel kitchens across six countries, Chef Fikri made the choice to trade global prestige for something far more meaningful—to be closer to his mother. Alongside his sister, a talented painter, he founded Galanggal, a space where flavor and art truly meet.
Meeting Chef Fikri feels like "reconnecting with a long-lost friend." Despite his five-star credentials, he remains incredibly grounded. What struck me most was his simple, unwavering life principle:
"I don't think too much, the most important thing is that I want to make good food."
This philosophy is the heartbeat of Galanggal. To achieve that "good food," he refuses to take shortcuts, personally visiting the local wet market every single morning to handpick the freshest seasonal produce. He strips away the ego of high-end dining to focus on the "honesty of ingredients," ensuring that every dish remains affordable without compromising on its culinary soul.
A Mediterranean Soul with Local Roots
His Mediterranean-inspired creations are a masterclass in how artistic vision and technical mastery can transform local ingredients into international masterpieces:
• Couscous Seabass : A perfectly pan-seared sea bass served with a rich tomato olive sauce and preserved lemon couscous. It delivers five-star hotel quality at a price that respects the customer's pocket, all by cleverly utilizing local resources.
• Harissa Chicken : Tender deboned chicken leg resting on a bed of silky-smooth hummus and fresh vegetables. It’s a testament to his belief that high-level culinary art can be enjoyed in its most simple, unpretentious form.
Chef Fikri refuses to be confined by the boundaries of a menu. His style is "effortless" and free-spirited—ranging from a comforting, traditional Chicken Masak Lemak to refreshing signature sips like The Tebu (sugarcane & citrus).
