Sodium Ascorbate is the sodium salt of L-ascorbic acid (vitamin C), a water-soluble, white to slightly yellowish crystalline powder. It serves as a multifunctional food additive (E301), acting as a potent antioxidant, colour retention agent, and acidity regulator. Unlike pure ascorbic acid, it is near-neutral in pH, making it gentler on the stomach and ideal for products where acidity would disrupt flavour or stability. It provides highly bioavailable vitamin C while preserving the colour, freshness, and nutritional value of a wide range of products.
